Kaiserschmarrn

You need:

Ingredients:

2 eggs
500ml JOYA Soya Pur
1 teaspoon sugar
1 teaspoon salt
350g coarse grained flour
1 shot sparkling water
30g margarine
Raisins optional
Icing sugar to sprinkle

 

 

 

Separate the egg yolk from the egg white. Beat together the JOYA soya drink, the egg yolks, sugar and salt to form a smooth paste. Gently pour the flour into the mixture until you get a thicker but not too stiff consistence. If desired sprinkle in the raisins and pour in some sparkling water (which gives a fluffy Kaiserschmarrn). Whisk the egg whites in a large mixing bowl until standing in soft peaks. Carefully fold in the egg whites into the sugar mixture. Melt some butter or margarine in a frying pan. Cook over a medium heat until the underside is browned. Flip over with too folks and break it gently into pieces to cook the other side. Repeat this process several times until done. Do not squeeze the dough. Sprinkle with icing sugar and serve.
